Who enjoys cooking when you get home from a long day of work, school or chauffeuring the tots? Certainly not me! By the time I get home, wash Noodle’s bottles and bowls, prepare them for the next day, then play with Noodle, maybe get in a workout, eat some grub, and put baby to bed, it’s 8 or 9 o’clock…easily! That leaves little time for cooking or anything else. I normally cook on the weekends and our leftovers can sometimes stretch to Wednesday. This means I’m always on the hunt for HEALTHY, quick dinner solutions which can get us to the weekend. What about you? These taste-bud and waistline friendly recipes get the job done!
My fridge staples for time-crunch cooking are-
Tangy Turkey Sloppy Joes with Sweet & Spicy Sweet Potato Fries: Ground Turkey (onions, bell peppers, finely chopped carrots for a veggie boost, brown sugar, tomato paste, mustard, salt, pepper, & garlic powder) Sweet Potato Fries (chopped thin, baked, then sprinkled with brown sugar and ground cayenne pepper). No pic available because I’m cooking this tonight!
Blackened Chicken over Fresh Greens & Berries: use Fresh Spinach & Romaine Lettuce, Dried Cranberries & Fresh Strawberries, & Thin Sliced Chicken Breast blackened in a skillet or griddle (also great with rotisserie chicken from your local grocer. See my pic below)
